Strawberry Chocolate Chip Cookies

This recipe was first shared in the February, 2021 issue of The Tea Life Style magazine.


This recipe puts a different twist on the concept of chocolate-covered strawberries. The use of freeze-dried strawberries means you can enjoy the flavor of strawberries year-round.

Strawberry Chocolate Chip Cookies

Ingredients:

  • 1 C salted butter

  • ½ C brown sugar

  • ½ C white sugar

  • 1 egg

  • 1 egg yolk

  • 1 Tbsp vanilla extract

  • 2 ½ C AP flour

  • 1 tsp baking powder

  • 1 C white chocolate chips

  • 1 C semi-sweet chocolate chips

  • 1 C freeze-dried strawberries*

 

Instructions:

  1. Partially melt butter in microwave.


  2. Cream butter and sugars in bowl of stand mixer (using paddle attachment) on med-high speed, scraping the bowl half way through.


  3. Reduce mixer to med speed, and beat in egg, yolk and vanilla extract.


  4. Sift dry ingredients together in a separate bowl.


  5. Reduce mixer speed to low and slowly add dry ingredients to wet, being careful not to over-mix.


  6. Stir in white and dark chips and strawberries, gently by hand.


  7. Scoop dough onto parchment-lined baking sheet, flatten slightly and refrigerate for 1 hour.


  8. Preheat oven to 325.  Bake for 12-14 minutes or until slightly browned around edges.


Makes approx. 24 cookies


Recipe notes: Please don't use fresh or frozen strawberries for this recipe. Freeze-dried strawberries maintain their color and flavor without making the dough soggy.
